Wild Rice Muffins

  • ¼ cup Butter
  • ½ cup Brown Sugar
  • 2 shredded Apples
  • 2 Eggs
  • 1 cup Milk
  • 1/5” Molasses
  • 1 ½ cup Flour
  • 3 tsp Baking Soda
  • ¾ tsp Salt
  • 1 ½ cup Cooked Wild Rice
  • 1 ½ cup Oats
  • ½ cup Sesame Seed
  • 1 cup Raisin
  • ½ cup Walnut

 

Preheat oven to 360° Fahrenheit.

In a medium bowl, stir together the flour, baking soda, salt, cooked wild rice, oats, sesame seed, raisin and walnut.

In a separate bowl, mix butter, sugar, apples, eggs, milk and molasses.

Combine wet ingredients into dry, mixing thoroughly until well blended.

Pour batter into paper lined muffin pan cups. Bake for 25 minutes. It should make 24 medium size muffins.

 

Simply Wild: Add cooked wild rice to scrambled eggs (just before cooking eggs). Try heating cooked wild rice with cream, brown sugar and cinnamon for a delicious, nutritious breakfast.
