Wild Rice Pizza
1 (4 ounce) box wild rice, cooked
2 eggs, beaten
2 tablespoons butter, melted
1 cup pizza sauce
1-1/2 cups shredded mozzarella
1 cup pepperoni
1/4 cup purple onion, chopped

Preheat oven to 450 degrees F.
Spray a pizza pan with nonstick cooking spray and set aside.
Cook the rice according to the package and fluff with a fork.
Mix well with the eggs and butter and press into the prepared pizza pan.
Spread the pizza sauce over the rice crust.
Top with mozzarella, pepperoni and purple onion, and bake for 10 to 12 minutes.
Slice and serve immediately.
